I've made a lot of pecan pies, but up until this week I'd never made one in a blender. Adapted from an old cookbook called The Blender Way of Better Cooking, Blender Pecan Pie has you put the ingredients in the container, blend for 3 seconds, then pour into the pie shell. This has its pros and cons, but the end result is a pretty good pecan pie.

The texture of this pie was soft but not runny and the flavor was good, with the cinnamon coming through clearly. I feel like some of my other pecan pies have a little more flavor, but that's probably from a huge amount of butter and more corn syrup. This one still had a good flavor and a very nice texture from the cream. I did not find it to be cloying sweet, though it was sweet.
Blender Pecan Pie Ingredients
Blender aside, this is an interesting pecan pie recipe. In addition to dark corn syrup and sugar, it calls for a half cup of heavy cream, 2 tablespoons of butter, and small amounts of vanilla, cinnamon and salt. Also, the amounts of corn syrup and sugar are reversed, so this pie has less corn syrup than most pecan pies. This could be a good thing if you are low on dark corn syrup.
Blending the Filling
Making the filling was kind of fun, and I tried to do it without using measuring cups. I put the blender container on the scale, set the tare to zero, and added the ingredients in order listed using their weights. I used the lowest power to blend, but as expected this practically pulverized the pecan halves. Blenders are more powerful these days, so I recommend roughly chopping the pecans yourself and just pouring the blender mixture right over.
Bake Time and Temp
Most of my pecan pie recipes call for a temperature of 350 or 375 F, but this recipe calls for baking at 400 F. Maybe it's because this pie has a slightly different composition, but the higher heat and quicker bake time work. The crust will brown a little more, but if you are worried about that you can shield the edges.

This is not relevant to the recipe, but I had fun baking out of this old book. I've had it literally since I was born and remember looking at the pictures as a toddler. This was always my favorite page. Anyone need a flavored whipped cream recipe?

Blender Pecan Pie
Ingredients
- 1 9-inch deep dish pie crust (frozen type)
- 1 ½ cups pecan halves and 25 extra halves for the border (140 grams)
- 3 large eggs, room temperature (145 grams)
- ½ cup heavy cream, room temperature (114 grams)
- ½ cup dark corn syrup (140-150 grams)
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- 1 cup granulated sugar (200 grams)
- ½ to 1 teaspoon vanilla extract (I recommend 1, book said ½)
- 2 tablespoons butter, softened (28 grams)
Instructions
- Preheat the oven to 400 degrees F. Set a rimmed baking sheet in the oven to preheat along with it.
- Roughly chop the pecan halves and place them in the unbaked frozen pie crust. If you want to make a border of pecan halve, take about 25 extra halves and set aside.
- Put the remaining ingredients in the blender in the order listed.
- Cover and run on low speed just until blended, then pour mixture over the pecans. If making a border, arrange the reserved pie halves around the side.
- Set pie on the preheated baking sheet.
- Bake for 35 minutes or until filling is puffed and crust is browned.
- Let cool for several hours. Refrigerate overnight if desired, then bring to room temperature and slice. Alternatively, you can let the pie cool and then freeze it until ready to slice.

My Vitamix was a gift. I understand completely how you feel about the expense though and mine is noisy. I use ear muffs when I use it.

I would love a Vitamix but just haven't been able to justify the $$$. I hear they are worth it, though! My blender is a Black & Decker. It gets the job done and is relatively quiet, which is important for me. The rest of the pie is going in the freezer.

That sounds like a fun pie to make. I don’t have a traditional blender anymore. Just a Vitamix and an immersion blender. That old cookbook is fun to see. My MIL had so many old fun looking cookbooks. It was hard not take some of them when we were cleaning out her house, but alas I have so many of my own that I only took the Nancy Baggett book. Enjoy the pie!
