Granola vs. Other S'mores Bars
The recipe is an old one originally from King Arthur, and it reminded me of another sweet treat, the Hershey's S'mores Bars. Comparing the two, the King Arthur bars are chewy and sweet, but a little less rich thanks to all the oats. These slice neater and can be served as large bars or small squares.

Ingredients for Chewy Granola Bars
For this easy granola bars recipe, you'll need some pantry staples plus a few that may or may not fall into that category.
- Butter
- Brown Sugar
- Golden Syrup
- Oats
- Flour
- Salt
- Graham Cracker Crumbs
- Chocolate
- Marshmallows

Instructions for Making S'mores Granola Bars
Ignore the pan size in these pictures because I scaled my batch down a bit. The recipe in the card is for the full batch which fits a 9-inch square pan.

- Step 3: Top with remaining oat & graham mixture, press it tightly, then bake for 20 minutes.

- Step 4: Let cool, then chill and cut while cold for even slices.
Hint: Non-stick foil is perfect for sticky bars like these. When the bars are cool (or cooled and chilled), you can lift the foil from the pan and cut neatly.
Substitutions
Most of the ingredients are pantry basics at our house, but the recipe is open to some substitutions.
- Golden Syrup - Maple syrup or light or dark corn syrup may be used.
- Marshmallows - You can use Marshmallow Fluff or Marshmallow Creme. Spoon it over the base, oil your fingers and press it down. You'd probably want to put it on before the chocolate.
- Oats - The original version called for old fashioned oats, but quick cooking work really well and hold together nicely too.
- Chocolate - If you have different kinds of chocolate, use a mixture of different chocolate and/or chips rather than just chips. Milk chocolate is traditionally associated with S'mores, so it's the perfect addition.
Storage
The bars can be kept for about 3 days sealed tightly at room temperature, but I recommend storing them in a freezer bag in the freezer.

S'mores Granola Bars
Ingredients
- 6 tablespoons unsalted butter (170 grams)
- ¼ cup firmly packed light brown sugar (50 grams)
- 6 tablespoons golden syrup, maple syrup or corn syrup (114 grams)
- 2 ¼ cups oats (215 grams)
- ½ cup unbleached all-purpose flour (60 grams)
- ½ teaspoon salt
- 1 cup graham cracker crumbs (100 grams)
- 1 cup semisweet or bittersweet chocolate chips (170 grams)
- 1 ¼ cups mini marshmallows (150 grams)
Instructions
- Preheat the oven to 350°F. Line a 9-inch square pan with nonstick foil or parchment paper.
- Melt the butter in a large saucepan, then add the sugar and syrup and stir until sugar is dissolved. Off heat, stir in the oats, flour, salt, and graham cracker crumbs.
- Press a little over half of the mixture into the prepared pan. Let it cool completely if it is still warm.
- Sprinkle the chocolate chips evenly over the top, then the marshmallows. Top with the remaining crust mixture, pressing it down to flatten.
- Bake the bars for about 18 to 20 minutes or until edges are caramelized and golden.
- Remove from the oven and let cool completely. Chill slightly before cutting (for neat edges). You can also slice while warm if you'd rather have warm bars.
- These can be cut cut into bars or squares depending on the occasion.
