Soft Bran Chocolate Chip Cookies were inspired by the packaged Fiber One Chocolate Chip bars I keep seeing. I haven't tried the bars yet, but this homemade cookie version is pretty good, plus I know exactly what's in them.
Easy One Bowl Soft Bran Cookies!
This is an easy stir-and-bake recipe. The chopped (or ground) Fiber One gives the cookies some extra texture, while the honey keeps them soft and chewy. They kind of remind me of Keebler Soft Bake chocolate chip cookies, but with a honey and bran flavor.
Fiber One Sweetened with Sucralose
Update: As of now, Fiber One is still sweetened with sucralose. I gave up sucralose and aspartame, so I no longer buy Fiber One. The good news is Nature's Path Smart Bran works just as well, though the texture is slightly different. They're still soft, but the texture is a little less dry. Maybe the Fiber One absorbs more moisture from the batter. I plan on testing these with All Bran in the near future.

Soft Bran Chocolate Chip Cookies
Ingredients
- 2 tablespoons unsalted butter melted
- 2 tablespoons water
- ½ cup bran cereal, ground in coffee grinder or processor (28 grams)
- 2 tablespoons packed brown sugar (25 grams)
- 2 tablespoons granulated sugar (25 grams)
- 1 teaspoons vanilla extract
- 1 ½ tablespoons honey (30 grams)
- 1 large egg white
- ¼ teaspoon teaspoon baking soda
- ¼ teaspoon salt
- ½ cup all-purpose flour (65 grams)
- ¼ cup 1 ½ ounces semi-sweet chocolate chips
Instructions
- In a mixing bowl, combine melted butter, water, ground cereal, both sugars, vanilla, honey, egg white and salt and stir until smooth. Add the flour and stir to form a soft dough. Stir in the chocolate chips.
- Divide dough into 12 even pieces on a foil lined plate and chill for about 30 minutes. Alternatively, you can just chill the dough (especially if it's very soft) and divide after chilling.
- When dough is slightly firmer, gently smooth the mounds into balls.
- Arrange balls 2 inches apart on a parchment lined baking sheet and press tops down slightly. Bake at 400 degrees F. for 6 to 7 minutes. Let cool completely.
- I think these taste better after they are completely cooled and the chocolate chips have re-set.

Shirley, All Bran would work too :). And I think a little bit of flax would be okay -- just not too much.

These sound good, Anna, guess I'll have to put Fiber One cereal on my shopping list for next week.
I've been using KA's white whole wheat flour in most of my cookies and such so I'll probably stick with that. Do you think stirring in a bit of gold flax meal would be good. I also seem to put some of that in everything!
