This almond flour pie crust is a recipe that originally came with a chocolate pie. The chocolate pie was pretty good. However, since I have so many better ones I decided to just keep the gluten-free crust recipe which you can use with any cream pie.
The recipe is adapted from Kate McDermott's Art of the Pie, a Practical Guide to Homemade Crusts, Fillings and Life. It's a combination cookbook and autobiography which doesn't lack for recipes and reads like a cooking class with a trusted baker friend. So far I've only tried one pie recipe with the almond flour crust, but there are plenty of others to tackle.
Almond Flour Pie Crust
The crust is made by mixing nut flour, sugar, salt and butter and just pressing it into the pan. You can use almond meal, almond flour or a mixture of different nut flours such as almond and hazelnut. The crust below is a blanched almond flour crust so it's kind of pale, but it was very tasty nonetheless.
Here is the recipe. I've yet to try baking this, but I think baking it at 350 for about 6 minutes would enhance the flavor even more.

Ingredients
Almond Flour Crust
- 2 cups almond meal or blanched almond flour
- 2 tablespoons sugar
- ¼ teaspoon salt
- ¼ teaspoon cinnamon optional
- 5 tablespoons unsalted butter or salted lightly melted
Instructions
- Mix the almond flour, sugar, salt and cinnamon together in a large bowl, then pour in melted butter. Stir until moistened.
- Press mixture into bottom and up sides of a 9 inch pie dish. Chill for 2 hours.

I know that there are GF flour mixes out there that are supposed to measure cup for cup of regular flour, but mine does not. if you are using a mix that does not measure cup for cup 1/4 cup is around 35 grams for GF flour. so a tablespoon would be around 8 grams. I noticed that is what your filling called for in your Mocha pie. Maybe that will help you. I know that some do not have food scales, but they are relatively inexpensive.
I have not tried your recipe yet so I can not rate it.
