A while back I made a batch of Travis House Cookies and put them in the freezer. A few days later my daughter asked me what that those "delicious and chewy" cookies she'd found in the freezer were, and said that if she started a bakery she'd put them in the line-up. I was super happy the Travis House Cookies got some love, and it inspired by to make this list. I actually made this list in 2020 and forgot about it too!
Travis House Cookies
So first up are the Travis House Cookies I linked to earlier which are surprisingly good for such basic meringue cookies. Maybe this last batch was just extra good because I used candied pecans, but still -- the cookies don't get a lot of attention from me or anyone else. They'll be a feature at Emma's bakery at least.
Chewy Chocolate Macaroons
Macaroons made with regular or fat free condensed milk, coconut, unsweetened chocolate, cocoa powder and cake flour. They are easy and a real hit with people who love coconut. And truth be told, I didn't even like macaroons until I tried this recipe.
Best Yet M&M Cookies
Unfortunately the shortening is what makes them good. It really improves the texture. I've seen some chewy M&Ms cookies recipes out there and Fuzz is actually partial to Erin's recipe from 1,000 Best Cookies on the Planet, but I prefer these. They are like the old grocery store bakery M&Ms cookies. Shortening is required, but you can use Spectrum or Nutiva.
Small Batch Hermit Bars
Soft and chewy with a strong gingerbread flavor, these are perfect for fall baking, but good any time of year.
Cheerios Peanut Butter Cookies
The Cheerio's Chocolate Chip Cookies have a loyal following, but the peanut butter variation doesn't get as much attention. It should! (I wrote that in 2020. It's now 2023 and I'm seeing a whole bunch of Cheerios recipes pop up, so I guess they are getting more attention).
Indoor S'mores
These cookies have everything! S'mores and their cookie offshoots never go out of style. This one is probably the OG S'mores bar. Try them for a little bit of nostalgia.
Cake Mix Lemon Cheesecake Bars
I remember the first time my mother made these, and I believe it was my first taste of cream cheese. It took me years to find out what it actually was because up until then I thought I didn't like sour cream or cream cheese. Lemon Cheesecake Bars changed my opinion of it.
Peanut Butter and Jelly Cookies
From Jennifer at Bake or Break's book, these are the best Peanut Butter and Jelly Cookies out there. If you are not a huge fan of jelly, try them anyway and don't leave it off. The jelly is what makes them great (and this is coming from someone who doesn't love jelly).
Milk Bar Life Oatmeal Cookies
From Christina Tosi, so of course they are good! Great, actually. Not sure why I don't make these more often.
More Lists of Cookies I Forget About
I could make one list like this per month given how many recipes there are buried in my archives which I tend to forget out. Speaking of which, Nanaimo Bars! I've always used one recipe, but I'm in the process of making a new and less sweet batch. I'll post it soon. Thanks for reading.
