If you have butterscotch lovers in your life, here's a fun little treat you can throw together in minutes. They're Butterscotch Marshmallow Bars! They're the kind of thing you might find in the No-Bake section of a cookie cookbook, but they're really more of an easy candy. To make them, you just melt together butterscotch chips, peanut butter and butter, then stir in nuts, coconut and marshmallows. You then pour the mixture in a pan, chill until set, and cut into squares.
Pyrex Flameware Double Boiler
This is a vintage recipe, so I used the old double boiler I found at a thrift store last week. It's Pyrex Flameware. Did you know there was such a thing as a Pyrex double boiler? I don't cook with glass very often, but it's fun to be able to see through the pot. Plus it reminds me of a Christmas back in the '80s when I asked Santa for Visions Corningware (which is actually an amber color). If you too would like a glass double boiler there are plenty on Etsy. But no worries if you don't. You can always melt the butterscotch mixture in the microwave.
Butterscotch Marshmallow Bars Notes
Butterscotch Marshmallow Bars aren't complicated, and I don't really have any notes other than make sure to use flaked coconut. I used shredded and the bars are fine, but the texture of the shredded coconut is a little noticeable. If you don't like coconut, consider substituting Potato Stix (and then let me know how they worked out!). Also, feel free to swap out the walnuts for any other nuts. I used a combination of cashews, Brazil nuts and salted peanuts.

Butterscotch Marshmallow Bars
Ingredients
- 11 oz butterscotch morsels (310 grams)
- 1 cup creamy peanut butter (250 grams)
- ½ cup butter, salted (114 grams)
- 10 oz miniature marshmallows (280 grams)
- 1 cup walnuts or any other nut
- 1 cup sweetened flaked coconut
Instructions
- Line a 9x13 inch pan with parchment paper or foil. If using foil, spray with cooking spray.
- In the top of a double boiler, combine the butterscotch morsels, peanut butter and butter. Melt over simmering water.
- Remove boiler from the heat. Let mixture cool slightly, then add nuts, coconut and marshmallows.
- Transfer mixture to the 9x13 inch pan and spread as evenly as you can. Chill until set, then lift from pan and cut into squares.
