One Bowl Chocolate Mocha Cake is a recipe I created years ago for a cooking contest and it just so happened to win $10,000. I made dozens of variations on it, but this is the version that won because it tastes good and was a pretty good use for the sponsor product – reduced fat mayonnaise. I used to make it with Hellman’s “Just 2 Good” mayonnaise, but I am not sure Hellman's makes that type anymore and Cooking Light now calls for “reduced fat mayonnaise”. In this case, I wouldn’t try it with regular mayonnaise because it would be too greasy. It’s plenty moist with the reduced fat.
I’m going to link you to the My Recipes recipe so you can read other reviews, but here’s my tip. Chill the syrup before drizzling so that it won’t go everywhere.
Also, this one is served straight out of the pan so it’s good for pot-lucks. You do have to keep it refrigerated up until serving time, though.

Lala, I recommend sticking with a rectangular pan due to the consistency of the icing/topping. And yes, you can definitely add more chips! You can use as many extra chips as you want, but since you asked how many I'll say 1/2 cup extra ;).
Lala says
I forgot to ask, can this be baked on 2 round pans and what size? Thanks!
Lala says
Hi Anna, I love chocolate, do you think I can add more chocolate chips on this recipe, if so, how much? Thanks.
Anna says
I can't tell you how happy it makes me to know people are out there making this cake and marking it as a favorite :). Thanks!!!
Olga, no worries! In my opinion, I don't find the mayonnaise detectable. I can't promise you *you* won't taste it, but nobody has ever tried this cake and said to me they detected mayonnaise. Lots of chocolate cakes are made with mayonnaise. I hope you try it. If you end up not liking it, I'm sure you'll find plenty of people to help you eat it. Also, if you want to try mayonnaise in a different cake, the guys from Baked have a new(ish) chocolate mayonnaise cake over on Epicurious.

I first saw this recipe, read about the mayonnaise and decided i didn´t feel like making it.. but i find myself coming back and comming back.. it looks so Yummmy.
I´m a bit afraid to ask...Can you tell there is mayonnaise in the cake even if it is just a hint?
I feel like trying this recipe, only im a bit reluctant about the mayonnaise. I don´t mind eating it in the cake as long as it doesn´t taste like it?..I had a carrot cake once tasting so much like mayonnaise, and i dont even want to remember.
I know it is your winner recipe Anna i hope i dont hurt your feelings.. :p..
Have a great day..:)

Anna - I've been reading your blog for several months now. Thanks for the constant cookie inspiration! My boys' lunchboxes thank you. And now I can also thank you for the mocha cake recipe - it has been in my baking binder for years. It is one of my oldest son's favorites.

I make this cake all the time to rave reviews. I have one friend who asks me to make it for her for every occasion. She sent me a video one time of when she asked her kids if they wanted a piece of Terri's cake and you should have seen the reaction! Jumping up and down, shouting "I want cake!" So good and so easy!

What a coincidence - the day you posted this I pulled up the recipe to make it for my co-workers. I first had it at a Cooking Light dinner party and thought it was delicious.

I can vouch for this magnificent recipe!! I've been making this recipe (without any substitutions) since the day you first you first showed it to me, and it's still in our top 3 favorite desserts in our house. SOOOO good!! In fact I better not let Scott see this post or he will beg me to make it tomorrow. 🙂

Carol, I am sorry to say yogurt won't give you the same good results.
Carol Herman says
Can you use yogurt (or Greek style yogurt) for the reduced mayo? (I don't buy reduced products.)
Anna says
Yeah, there's always someone who messes up the recipe then gives it one star.
Louise says
I read all the great reviews averaging 5 stars and, of course, had to read the very few that gave one star. It makes me wonder what they did wrong and if all their ingredients came from the dollar store.
Sue says
Wow! 48 reviews and 5 stars!! That's impressive! The cake looks good, but that topping looks especially good!! No wonder you won!!

A must try for me sure. I love coffee and chocolate anything! I also love the slice that's out of it, because that is the slice I would take for myself- never from a corner- I always serve myself a middle or side piece!
