Ingredients
11ozbutterscotch morsels(310 grams)
1cupcreamy peanut butter(250 grams)
½cupbutter, salted(114 grams)
10ozminiature marshmallows(280 grams)
1cupwalnuts or any other nut
1cupsweetened flaked coconut
Instructions
Line a 9x13 inch pan with parchment paper or foil. If using foil, spray with cooking spray.
In the top of a double boiler, combine the butterscotch morsels, peanut butter and butter. Melt over simmering water.
Remove boiler from the heat. Let mixture cool slightly, then add nuts, coconut and marshmallows.
Transfer mixture to the 9x13 inch pan and spread as evenly as you can. Chill until set, then lift from pan and cut into squares.
Notes
If you don't have a double boiler, melt the butterscotch mixture in the microwave using 50% power and stirring every 40 seconds. You could also use high power and stir every 30 seconds, just be sure the butterscotch morsels are covered with peanut butter and butter so they don't overheat.
