Ingredients

  • 8 tablespoons unsalted butter room temp. (114 grams)
  • ½ cup granulated sugar (100 grams)
  • ½ cup brown sugar, packed (100 grams)
  • ¼ cup peanut butter (64 grams)
  • 1 large egg
  • ½ teaspoon vanilla
  • 1 cup all purpose flour (130 grams)
  • ½ teaspoon EACH - baking powder baking soda and salt.
  • ½ cup quick cooking oats
  • 1 ½ cups Cheerios
  • 1 ⅓ cup semisweet chocolate chips

Instructions

  • Preheat the oven to 375° F. Line a couple of cookie sheets with parchment or just leave ungreased. Note: If you don't want your cookies quite as brown, you can bake at 350°F. You can also bake at 330°F convection for about 10-12 minutes.
  • Cream the butter and both sugars with an electric mixer.
  • On low speed, beat in the peanut butter, egg and vanilla.
  • In a separate bowl, stir together the flour, baking powder, baking soda and salt, then add the flour mixture to the butter mixture and stir until incorporated. Add the oatmeal, Cheerios and chocolate chips.
  • Drop dough by rounded tablespoonfuls or medium size cookie scoops onto the cookie sheets.
  • Bake at 375° for 10-12 minutes.
