10tablespoonsunsalted butter, softened so that it's very soft(140 grams)
1cupgranulated sugar(200 grams)
1cupmashed banana
1largeegg
½teaspoonvanilla extract

Instructions
Mix the flour, cocoa powder, baking soda, salt and oats together in a large bowl.
In a second bowl, whisk together the very soft butter, sugar, banana, egg and vanilla.
Using a quarter cup measure, drop scoops of dough onto parchment lined baking sheets spacing 3 inches apart. Bake at 350F for 15 to 17 minutes or until cookies appear set. Let cool on baking sheets for about 5 minutes, then transfer to a cooling rack to cool completely.
When you're ready to make the sandwiches, throw the cookies in the freezer for about 20 minutes so they'll be firmer and colder when you squish the ice cream between them. While they're firming, you can take the ice cream out to soften. Assemble sandwiches and re-freeze.
Notes
The recipe originally called for shortening, but these can be made with butter. Rather than melt it completely, let it stand out for a while or use a low setting on the microwave to get it very soft. You should be able to just stir this batter together without using an electric mixer.
