Kentucky Bourbon Balls

Boozy little balls of with a chocolate and bourbon flavor. This recipe is adapted from one I saw in The Commercial Appeal.

Ingredients

  • 1 cup very finely chopped vanilla wafer crumbs
  • 1 cup finely chopped toasted pecans
  • 1 ½ cups confectioners' sugar divided use
  • 2 tbsp. unsweetened cocoa
  • 2 tbsp. Kentucky bourbon
  • 1 ½ tbsp. light corn syrup

Instructions

  • Combine crumbs, pecans, just 1 cup of the confectioners' sugar, and cocoa.
  • Combine the bourbon and corn syrup in a second bowl, then scrape into the dry mixture. At this point you can attempt shape the balls or you can chill the dough and shape it later. I found it pretty easy to just shape the balls right away.
  • Using a tablespoon, scoop up dough and shape into balls.
  • Cover the shaped balls and store in the refrigerator. Shortly before serving, dust with extra confectioners' sugar.
