Stir peanut butter, sugars, softened butter, baking soda, baking powder, egg and vanilla in large bowl until well mixed. Stir in 3 cups cereal and chocolate chips.
At this point, assess whether or not you feel the cookies have enough Kix. Do they hold together? Do you get a big burst of crunchy corn Kix flavor in every bite? Add remaining cereal based on how you feel about life.
Shape rounded tablespoonfuls of dough into balls and place about 2 inches apart on ungreased (I recommend lining with parchment) cookie sheet. Bake 10 to 12 minutes or until golden brown.
Cool 5 minutes; remove from cookie sheet. Cool completely. Store loosely covered. Makes about 3 ½ dozen cookies.
