3cupsall-purpose flour, measure carefully or weigh(390 grams)
1tablespoonbaking soda
1 ½teaspoonground cinnamon
1tablespoonground ginger
¼ to ½teaspoonsalt (scant) -- you can omit it if you'd like
1cupcanola oil (I used grapeseed oil)
1 ¾cupsugar(350 grams)
1largeegg
⅓cupmild molasses

½cupextra sugar for rolling
Instructions
Preheat oven to 350 degrees F. Line a couple of baking sheets with parchment paper.
Thoroughly whisk together the flour, baking soda, ginger, cinnamon and salt (if using).
Cream together oil and sugar, then add egg and molasses. You can use a stand mixer or do it by hand.
Add the flour mixture and stir until well blended. You should have a fairly soft dough.
Shape into 28 to 30 balls. Roll the balls in reserved sugar or put them in a bag with extra sugar and shake to coat.
Arrange on baking sheets spacing about 2 ½ inches apart.
Bake at 350 degrees F for about 12 minutes or until cookies appear cracked and set. Let cool on the tray for 3 minutes, then carefully transfer to a wire rack to finish cooling.
Notes
This recipe is a great way to use natural or organic sugar - the kind that's a little darker and coarser. I use Florida Crystals.
