Ingredients
1 ½cups all-purpose flour**(190 grams)
½teaspoonsoda
¼teaspoonsalt
8tablespoonsunsalted butter, softened(114 grams)
½cuplight brown sugar(100 grams)
½cupgranulated sugar(100 grams)
½teaspoonvanilla extract
¼teaspoonpistachio or almond extractoptional
1largeegg(50 grams)
⅔cupsemisweet chocolate chips
½ to ⅔cupdried cherries
½ to ⅔cuproasted unsalted pistachio nuts
Instructions
Preheat oven to 350 degrees. Line a 9 inch square metal pan with nonstick foil.
In a bowl, mix together the flour, baking soda and salt.
In a mixing bowl, using an electric mixer, beat the softened butter and both sugars until creamy. Beat in extracts and egg.
Add the flour mixture and stir by hand until thoroughly blended, then stir in the chocolate chips, dried cherries and pistachio nuts.
Spread the mixture as evenly as possible in the pan and bake until golden – about 25-30 minutes.
Let cool completely in the pan, then lift from pan by grasping foil. Cut into squares.
Notes
I recommend weighing the flour. If you don't have a scale and are using volume measurements, make sure to stir it well and spoon it into the cup rather than scoop it. Too much flour makes bar cookies dry.
